Why acacia honey is green and crystallises slowly

Acacia honey is a favourite in many Bulgarian households, loved not only for its delicate aroma but also for its remarkable qualities.
Unlike most honeys, it crystallises very slowly because it contains a high ratio of fructose to glucose. That makes it ideal for sweet drinks, pancakes or simply eating by the spoonful.
Its colour is often described as pale green or amber, especially when light passes through a thin stream. That clarity is a sign of purity and high quality.
