One day a year for Bee My Bloom Roses

We pick the roses for Bee My Bloom Roses ourselves, from the fragrant fields around the village of Rozino. We use fresh Bulgarian Damask rose blossoms, which we immerse in pure honey on just one day of the year — on the Strawberry Full Moon. Then we let time work its magic for three more lunar cycles.
The Strawberry Moon is the traditional name of the full moon in June. We chose it for our yearly ritual.
How do we capture the aroma of the Bulgarian rose?
A strong rose aroma does not mean the flower is rich in nectar. Most roses release very little or none at all, so they are not a common source of floral honey.
In our rose honey, the fragrance comes from the fresh blossoms themselves. Immersed in the honey, they gradually give it their aroma. This slow process is called infusion.
We do not add oils, flavourings or flavour enhancers. Only pure honey, fresh roses and a lot of patience. The result is an aromatic sweetness in which the Damask rose is clearly present, without overpowering the honey.
Why is the series limited?
Each harvest depends on the fresh roses we pick during the season. When the blossoms fade, we do not replace them with dried flowers just to produce more.
That is why Bee My Bloom Roses is a limited series. When the harvest runs out, we wait for the next rose-picking season and the next Strawberry Moon.
And when you open your own jar, taste the first spoonful on its own to sense the delicate aroma of the Bulgarian rose.
